Biscochitos

for the dough

• 150g lard (preferably leaf lard), butter or 50/50 lard butter mix
• 100g sugar
• 2g anise seed
• 1 egg
• 300g ap flour
• 1 tsp baking powder
• 1/2 tsp salt
• juice of one orange

combine separately in a shallow bowl

2 tsp sugar 2 tsp cinnamon

Cream shortening, sugar, egg and anise seed. Add flour, baking powder, salt, orange juice and mix until it forms a stiff dough. Chill for 30 minutes and then roll out to about 1/8-1/4", cut into shapes, press each cookie into the sugar and cinnamon mixture and bake on a greased cookie sheet for 10 minutes at 375F.

Makes about 2-3 dozen cookies, depending on size.
